Banana Muffins.. with or without Chocolate Chips

I WISH you really COULD smell my kitchen right now.
It smells so DIVINE!!!
And These Muffins are the Reason :)
There it is... Moist, Delicious, Banana-y muffins!
Here is a picture of one that has chopped up Dove Cark Chocolates in there!

These are SO DELICIOUS with or without Chocolate inside!!
(i made this recipe up myself)

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup brown sugar
2 eggs
1 tsp. vanilla extract
1/2 tsp. imitation rum extract
2 1/2 cups mashed overripe bananas (about 5 or 6 bananas)



In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, vanilla extract, rum extract, and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. 

Line your muffin pan with paper cups, spray the cups with non-stick spray, then fill each one about 2/3 full. Bake at 350 for 18-20  minutes; or until the middle muffin passes the toothpick test.
This will make about 24 muffins.

USEFUL TIDBITS:
*you can use egg whites instead of the whole eggs for less cholesterol..just use 4 egg whites instead of 2 whole eggs.. this works just as well!

**add 2 cups of dark chocolate chips for the ultimate banana chocolate chip muffin! I have even coarsely chopped up some Dove Dark Chocolate candies and used them! DIVINE!!!!

*** you can halve this recipe to make 12 muffins and it works just fine... remember if you are substituting with the egg whites, use 2 egg whites for the 1 egg.

****add about 1 cup of chopped walnuts for a chunky banana muffin! better yet... add some walnuts and chocolate chips for the Ultimate Chunky Chocolate Chip Banana Muffin!!!!
